Pannukakkutalo grows one pancake at a time – a shared POS system supports the next steps

Pannukakkutalo brings people together over sweet and savoury pancakes. A shared POS system supports table service and a growing franchise chain.

At Pannukakkutalo, a pancake is more than dessert. It can be lunch, dinner or a treat for the whole family to share. Specialising in sweet and savoury pancakes, the chain wants to bring its familiar concept to new restaurants while giving each business owner a ready foundation for everyday operations. In summer 2026, it chose Solmio-kassa as its shared POS system.

Meet Pannukakkutalo

Crisp edges, a soft centre and toppings to suit your taste. The idea for Pannukakkutalo came from the Netherlands in the early 2000s, and the chain was founded in Oulu in 2010. One familiar dish became the basis for an entire restaurant concept.

A pancake can take many forms. Hot-smoked reindeer, bacon and cheese turn it into a substantial meal. Strawberry and chocolate take it in a sweeter direction. Products are made in-house, children are considered, and many dishes have options for different dietary requirements.

The chain’s website presents restaurants in Levi and Seinäjoki. In Levi, the restaurant serves visitors to the resort; in Seinäjoki, it is located on Kauppakatu in the city centre. Growth is built around franchising: each entrepreneur runs their own restaurant, while the chain provides the concept, training and support.

The person behind it

Chain owner Keskitalo considers growth through the practical demands of running a restaurant. A new franchisee should not have to solve every operational question from scratch. A shared concept also needs shared tools.

When comparing POS systems, Keskitalo prioritised quality, price and a Finnish system. The service also made an impression:

“You rarely get service this good anywhere, and we’re talking about something as dull as tills.”

Where they started

Most of Pannukakkutalo’s sales are made through table service. A smooth visit therefore depends on more than the moment of payment. Information needs to move quickly between the waiting staff and the kitchen throughout the visit.

Picture a typical busy restaurant: one group is ordering, another is waiting for food, and a third wants to pay. Every table is at a different stage. Staff need tools that support this rhythm rather than forcing the restaurant to work around the system.

During Levi’s tourist season, this requirement becomes particularly important. Keskitalo’s starting point is that not a single euro of sales should be lost because of the POS system. This is an operational goal, not a claim of measured sales growth.

At the same time, expansion created another need: the chain wanted to offer the same proven approach as a ready-made option for future franchisees.

What they wanted to improve

There were two goals. Table service needed to be easy for staff, with fast communication between the waiting team and the kitchen. The chain also needed a shared POS system that would not have to be selected all over again for every new restaurant.

The price had to make sense, but affordability alone was not enough. The solution needed to suit Pannukakkutalo’s particular way of serving guests.

Why Solmio

The deciding factor was the overall fit: a Finnish system that supports table service and can be carried forward as the chain grows.

According to Pannukakkutalo, Solmio-kassa offered an easier and more affordable solution than its previous system. Digital solutions were implemented with Solmio to support communication between waiting staff and the kitchen. The focus was not on an individual device, but on how the whole setup fitted the restaurant’s work.

For a franchise chain, the decision also has a longer-term effect. Future franchisees can be offered the same system as part of an established operating model, rather than starting their own search from scratch.

Rollout: a shared foundation for growth

Pannukakkutalo became a Solmio-kassa customer in summer 2026. The starting point was everyday restaurant work: table sales, cooperation between waiting staff and the kitchen, and the demands of the peak season.

For staff, ease of use mattered. For the chain, the same decision laid a foundation for its next restaurants. This was not simply a POS purchase for the immediate situation, but a tool that future franchisees could also receive as a ready-made option.

What changed day to day

The benefits described by Pannukakkutalo concern usability, costs and a shared way of working. Precise savings or service-time measurements are not available.

  • Easier POS work — a more user-friendly solution for a restaurant where most sales are made through table service.
  • A more affordable setup — according to the customer, costs improved compared with the previous solution.
  • Support for communication — digital solutions implemented with Solmio support cooperation between waiting staff and the kitchen.
  • A shared foundation for growth — the same POS system can also be offered to future franchisees.

Keskitalo’s experience of the service sums up the partnership:

“We’ve spoken the same language with Solmio from the very beginning. Together, we’ve worked out solutions to what my business needs. Things have moved forward flexibly and quickly, and help has always been available whenever needed.”

When you visit Pannukakkutalo

If you still think of pancakes mainly as dessert, start with a savoury one. The menu’s favourites include hot-smoked reindeer with bacon and cheese, and cold-smoked salmon with lemon mayonnaise. Tomato, mozzarella and pesto offer a vegetarian option.

For something sweet, try strawberry and chocolate. Pancakes come in small and large sizes, and you can also create your own combination of toppings. Check dietary suitability and allergens with the staff.

On a day out in Levi, you can also take your pancake away. According to the restaurant’s stated policy, tables are allocated on a first-come, first-served basis, and dogs are welcome too. Check seasonal opening hours before visiting.

Advice for other business owners

One practical lesson from Pannukakkutalo’s approach is to think about the next location when choosing tools for the current one. When an established way of working can be handed to the next entrepreneur, they do not have to start every decision from scratch.

The restaurant’s own way of serving guests must still come first. The system’s job is to adapt to it.
